Our philosophy is simple at Koast, we are inspired by Maui, shaped by the seasons, and grounded in hospitality. Seasonality is more than a menu change. It is our commitment to celebrating Maui and the people who make its food culture special. We work with local farmers, fishermen and island producers to bring the best of Hawaii to the table allowing what is fresh and available to inspire our kitchen. From the mountain to the sea we believe in sourcing thoughtfully, cooking honestly, and letting exceptional ingredients speak for themselves. It is our goal to create a space that is genuine, creative and hospitable.
